鄧浩宏師傅

擁有超過20年的經驗和對完美烹飪的熱情,主廚鄧浩宏師傅擅長以鮮味滿載的食材烹調成歷久彌新的菜餚,薈萃傳統粵菜精髓及非凡創意,為The Mira Hong Kong 的一眾饕客呈獻粵菜「味歷」之旅,將傳統品味滋味昇華。 主廚鄧浩宏師傅於2015年加入文華東方文華酒店前曾於The Mira的中餐廳任職,一直醉心鑽研精進廚藝。自2016 年 5 月起,他重回國金軒並帶領才華橫溢,敬業樂業的廚師團隊,合作無間。 主廚鄧浩宏師傅擁有過人資質及廚藝天賦,廚藝無懈可擊,亦可以其豐富閱歷為證明。


傳統∙傳承︰香港情懷

再次參加香港美酒佳餚巡禮的大師發辦活動,國金軒中菜行政總廚鄧浩宏師傅為配合大會主題,「傳統∙傳承•香港情懷」,主廚將重新演繹三道傳統經典菜,如用阿拉斯加蟹爪製作歷史悠久家傳戶曉的香港特色避風塘炒蟹; 以龍蝦起肉代替花蟹,並創新以陳年女兒紅及手拉陳村粉來製作出傳統雞油花雕蒸蟹的變奏版;又以本地手打墨魚製成麵,重新演繹主廚童年時代屋村豬油渣狗仔粉的回憶。另外,主廚會以不同的手法及廚藝,演繹傳統菜式,以經典粵菜呈獻香港情懷,希望將傳統菜式傳承下去,介紹給時下本地年青人之餘,讓每一位食客都能認識香港傳統菜。
