區域中式廚藝總監江肇祺師傅出身於廚藝世家,入行超過三十年,擁有精湛中式廚藝及豐富經驗,堅持將食物的原汁原味完美地呈獻給食客。

傳統中式菜餚,用現代方式展現,而不失傳統粤菜做法,如一些懷舊菜式-如油浸筍殼,加配以新穎的桂花及葡萄燒汁,而中國人最喜歡食的小籠包,加入了時興的酸菜及鮮鮑魚,重新演繹的魚香蝦球加上大澳鄉土名物-銀魚及梅香鹹魚, 矜貴海味燴飯加上了手烤脆皮乳豬,兒時街頭小食砵仔糕,改變了用流心方式的做法。 這些傳統舊瓶菜餚,加上了不同的現代方式去展現及製作,讓中餐舊菜新做,重新演繹,傳承下去!此菜單已包含了美酒搭配。
