許美德師傅

許美德師傅入行至今三十多年,生長於潮州地區家庭,自幼耳濡目染,家裡媽媽是他的啟蒙老師,媽媽對地道潮州菜認識頗多,也傾囊相授,使許師傅成為潮州菜廚師的一份子。 許美德師傅加入百樂潮州集團也近二十年,這些年源用「傳統不守舊、創新不忘本」的宗旨,不斷將傳統潮州手功菜加以鑽研和演變而努力。 今次榮幸獲邀請參加『大師發辦』這活動,許師傅連同廚師團隊繼續發揚「承先啟後、精益創新」的精神,研究傳統和歷練創新,祈望能滿足更多喜愛潮州菜老饕。


大師發辦

擁有55年歷史的百樂潮州酒樓,一直以正宗潮菜為宗旨,今年許師傅特意以潮菜手法,配以新式材料,將傳統或快將失傳的潮洲菜式於『大師發辦』菜單中重新呈現,有潮洲菜必備的滷水菜式,以陳年滷水製作"滷水鵝頸肉鵝肝糖心蛋";有別於一般甜的燕窩,以鹹及鮮味制成的"潮式水晶燕窩球";還有傳統的"普寧豆醬雞"但改以法國春雞製作, 即使人少也可品嚐到人多才可點的宴席大菜,盡顯其團隊"傳統不守舊,創新不忘本"的理念。

Pak Loh Chiu Chow Restaurant has remained in its original location since opening its doors in 1967. Fifty-five years later, the original clients have passed on the tradition of visiting our restaurant to the next generation.
