Chef Hung Chi Kwong

Hung Chi Kwong is the executive Chinese chef of Rùn, a one-Michelin-starred Cantonese restaurant at The St. Regis Hong Kong. Drawing on over 33 years of experience, the Hong Kong native is renowned for his unique contemporary interpretations and reinventions of Cantonese cuisine – particularly in braised dried food, seafood and double-boiled nourishing soups. He is dedicated to experimenting with new ingredients in traditional cuisine to deliver authentic flavors in an elevated, modern approach.


Chef Hung’s Omakase

Empowered by 33 years of experience, Chef Hung Chi Kwong is celebrated for his culinary craftsmanship and passion for aesthetics. Chef Hung, executive chef of one-Michelin-starred Cantonese restaurant Rùn, unveils the curated "Chef Hung's Omakase" menu. It redefines omakase at its best and amplifies the "Culture & Heritage" of authentic Cantonese cuisine.

The menu includes six signature delicacies – highlighting Braised Abalone and Sea Cucumber with Abalone Sauce, Lobster Fried Rice with Sea Urchin Sauce and Seaweed, Double-boiled Pear and Peach Gum, with Red Date and Fritillary Bulb – each creation is designed to showcase the unique essences of traditional Cantonese cuisine.
