Chinese cuisine has a lot of varieties and in-depth history from different regions, and there are countless delicious delicacies with unique characteristics. Among them, Beijing cuisine and Huaiyang cuisine have a long tradition and unique style. Since its opening, Dong Lai Shun has been working hard to carry forward the culinary skills including "bao, roasting, stir-frying, shuan" as well as other cooking methods, so that guest can experience the authentic flavours of the traditional dishes. Founded in Beijing, Dong Lai Shun is famous for its “Shuan Yang Rou” and an array of authentic recipes passed down in generations. Dong Lai Shun continues to deliver the traditional craftsmanship of dishes and present the classic taste to the guests.

The recommendation of this menu would be the Deep-fried Minced Mutton with Pine Nuts. Chef Sze lays mutton and pine nuts on the chicken before deep-frying it. The crispy mutton is then cut into squares and served with spiced salt to enhance its flavour. “Pine nut has a subtle sweetness. It contains a large amount of unsaturated fat, which makes a nourishing dish when cooked with mutton,” says Chef Sze, “Chicken, on the other hand, is tender and mild in taste compared to mutton. It matches with the mutton perfectly without overwhelming its unique flavour.”
