Chef Wong Wing Keung / Dashijie

With nearly 40 years of experience under his belt, Executive Chinese Chef Wing-Keung Wong helms Michelin-starred Cantonese restaurant, Man Wah, at Mandarin Oriental, Hong Kong and the hotel’s Chinese banquet kitchen. Third-generation Chef Wong first joined Man Wah as the Sous Chef in 2011 before leading Yee Tung Heen at The Excelsior, Hong Kong to great international acclaim. In 2018, Chef Wong returned to Man Wah with the goal of taking the dining institution to even greater heights. With the revitalisation of Man Wah in 2021, his passion for nurturing a deeper appreciation for the nuances of Cantonese cuisine comes into greater focus. Under Chef Wong’s steadfast guidance, the new menu showcases refined classics while celebrating often overlooked culinary gems and forgotten delicacies.

Theresa Mak, known as Dashijie, has been honing her skills under the famous Cantonese cuisine expert Pearl Kong Chen in Hong Kong since the 1970s to study and preserve traditional Cantonese cuisine. Theresa is the first of Ms. Kong’s three students in Hong Kong and is known as "Dashijie, the First Disciple".


Gastronomic Inheritance Dinner Menu

Imparted the traditional culinary art from renowned master Theresa Mak, better known as Dashijie to Executive Chinese Chef, Wing-Keung Wong where the traditional dishes can be preserved. With a mission to deepen the appreciation of Cantonese gastronomy, Chef Wong renovate a brand-new presentation of Cantonese gastronomy featured in the Taste of Man Wah menu to story tell the inheritance of Cantonese cuisine.
