Chef Raymond Wong

Chef Raymond Wong Wai Man has been helming the Michelin-starred Shang Palace Chinese Restaurant of Kowloon Shangri-La, Hong Kong as Executive Chinese Chef since May 2022. In his capacity, Chef Wong oversees a multi-talented team of Chinese chefs and focuses on curating authentic Cantonese classics using only the best quality ingredients of the season.

Chef Raymond Wong handpicks only the best ingredients of the season and curates the most sought-after Chinese omakase 6-course menu for the epicurious in town, paying tribute to the authentic Cantonese dishes and at the same time showcasing his gastronomic intelligence in Cantonese cuisines. The menu’s highlight must go to “Braised partridge porridge with bird’s nest”, a long-lost nostalgic dish in local Chinese restaurants. It is named “Congee” in Chinese yet it’s curated without rice but bird’s nest, partridge and yam, which was very popular among the prestige families back in the 1960s to 1970s; another highlight goes to locally flavoured “Stewed beef brisket with turnip and Chinese celery in beef bone broth” prepared by daily-fresh beef brisket in beef bone broth; the delicate “Swan Lake” as a dessert which brings an overwhelming completion to the dinner.
